Ingredients:
- 2 large sweet potatoes
- 2 tbsp. butter
- 2 tbsp. Robust extra-virgin olive oil
- 4 oz. goat cheese, crumbled
- 2 tbsp. dried cranberries, finely chopped
- 3 tbsp. Cranberry Pear Balsamic Vinegar
- 2 tbsp. Maple Balsamic Vinegar
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400 °F and line a baking sheet with parchment paper
- Wash the sweet potatoes, then slice them in 1/4-inch thick rounds
- In a small bowl, mix the EVOO and melted butter, then brush both sides of the sweet potatoes with the butter-EVOO mixture. Season with salt and pepper.
- Arrange the slices in a single layer on the baking sheet. Roast for 15-20 minutes, then flip and roast for another 10-15 minutes or until tender and slightly caramelized
- Combine the Cranberry Pear and Maple Balsamic in a small saucepan over medium heat. Bring to a gentle simmer and reduce by half until it thickens slightly (about 5-7 minutes). Set aside to cool
- Remove the sweet potato rounds from the oven and let them cool slightly. Top each round with a small amount of goat cheese crumble.
- Lightly drizzle the Cranberry Pear Maple Balsamic reduction over the rounds. Sprinkle with finely chopped cranberries for a burst of color & added texture
- Arrange the sweet potatoes on a platter and serve warm or room temperature
