Ingredients:
- 20 grape tomatoes
- 10 mini mozzarella cheese, cubed
- 2 tbsp. fresh basil leaves, chopped
- 2 tbsp Tuscan Herb extra virgin olive oil
- 1 cup Neapolitan Herb Balsamic Vinegar
- Salt and freshly cracked black pepper to taste
- 20 toothpicks or small skewers
Instructions:
- Gather all ingredients
- Toss tomatoes, mozzarella cheese, olive oil, basil, salt, and pepper, until well coated
- Skewer ingredients in any combination
- Reduce your balsamic vinegar
- The volume will reduce by about half (e.g. one cup will yield 1/2 cup)
- Place the saucepan over medium heat
- Once it starts to bubble lightly, reduce the heat to low. Do not boil, as it can turn and become bitter.
- Stir every few minutes to ensure even heating and prevent sticking.
- Cook until the vinegar is reduced by half and coats the back of the spoon. This typically takes 10-15 minutes depending on the amount and your stove's heat.
- Remove from heat and let it cool. The reduction will thicken further as it cools.
- Pour cooled reduction onto the skewers.
