Quick Neapolitan Caprese Bites

Instructions: 

  • Gather all ingredients
  • Toss tomatoes, mozzarella cheese, olive oil, basil, salt, and pepper, until well coated 
  • Skewer ingredients in any combination
  • Reduce your balsamic vinegar
    • The volume will reduce by about half (e.g. one cup will yield 1/2 cup)
    • Place the saucepan over medium heat
    • Once it starts to bubble lightly, reduce the heat to low. Do not boil, as it can turn and become bitter.
    • Stir every few minutes to ensure even heating and prevent sticking.
    • Cook until the vinegar is reduced by half and coats the back of the spoon. This typically takes 10-15 minutes depending on the amount and your stove's heat.
    • Remove from heat and let it cool. The reduction will thicken further as it cools.
  • Pour cooled reduction onto the skewers.
